Changnyeong Garlic Galbisal (Unmarinated), Full Plate
Beef rib finger, 400g
₩35,000
BUSAN SEOMYEON
Our grandmother aged Changnyeong garlic together with the beef to take away any gaminess and leave the meat tender, then grilled it alongside whole cloves. Three generations on, we grill it the same way in Seomyeon, Busan.

OUR STORY
When we were children, our grandmother aged Changnyeong garlic together with beef to take away the gaminess and make the meat tender, then grilled it alongside whole cloves of garlic.
That fragrant, sharp garlic taste from those days is our happiness and our memory.
We study and safeguard the flavour built on her own recipe, now in its third generation, so that we can hand you the taste and the memory of those childhood days, exactly as they were.
SIGNATURE
A full plate of unmarinated garlic galbisal, a full plate of the spicy version, and a 450g half-and-half plate pairing 225g of each. All of them Changnyeong garlic.

GARLIC & AGING
Changnyeong garlic is aged together with the beef. When it hits the grill, whole cloves go on right beside the meat.
Garlic and beef are aged together, exactly the way our grandmother did it three generations ago.
Aging leaves the beef tender and free of gaminess — the thing guests mention most often.
Whole garlic cloves go on the grill next to the meat, so that fragrant, sharp flavour works its way in.
HOW TO EAT
Straight from the guide posted in the restaurant. Follow it in order and it tastes best.
Start with the kimchi & fish cake hot pot and a fish cake skewer to take the edge off your hunger.
Put the galbisal on the grill and turn it often.
Marinated galbisal needs turning even more often. Burn it and that one is on you!
Take the first bite of the unmarinated galbisal with just a touch of savoury salt.
The spicy baby octopus arrives already flame-cooked, so dip it generously in the mayo sauce and eat it right away.
Order a side dish to round the meal off with something starchy.
